DJ’s Boudain Stuffed Whole Flounder

Prep Time: 30 minutes
Cook Time: 40 minutes (varies depending on size of flounder)

Ingredients:
(for 2 flounder weighing 2 pounds each)

  • DJ’s Boudain (Regular or Jalapeno)
  • 2 tablespoons of extra virgin olive oil
  • Salt and ground black pepper
  • 2 sticks of butter
  • 2 yellow onions diced
  • 2 bell peppers diced
  • 4 stalks of celery diced
  • 2 lemons
  • Cajun Seasoning Blend

Directions:

  1. Lay flounder flat and insert your knife about an inch from the tail and make a long deep cut following the spine until you’ve almost reached the head end. Make the pocket by inserting the knife and working it with the blade almost flat scraping along the bones towards the edge of the flounder on both sides. *If you’re not a fisherman but love fish, you can buy a whole flounder scaled and gutted.
  2. Preheat the oven to 350 F.
  3. Place the flounder on parchment lined trays or in a parchment lined casserole dish. Rub the skin with olive oil and sprinkle salt and pepper in the inside of each pocket.
  4. Melt butter in a large skillet over medium heat. Add the celery, bell pepper and onion. Cook down until golden brown. Cut one lemon in half and squeeze juice into skillet. Add Cajun Seasoning Blend of your choice to your taste. Mix and remove from heat.
  5. Remove casing from a DJ’s Boudain link by cutting casing with knife on one side and pealing off. Cut the link in half length wise. Slide/Stuff in both side pockets. A large flounder may require 2 links.
  6. Season the fish with salt, ground black pepper, and a little paprika. As an alternative, if you do not have paprika, add a few dashes of your favorite Cajun Blend. Since Cajun Blends already have salt and black pepper, do NOT add salt and black pepper to the fish.
  7. Gently pour the sautéed vegetables over the boudain and fish. Add lemon slices to both flounder and bake covered for 25 minutes. Remove covering and bake for an additional 10-15 minutes. Fish is done when the thickest part easily flakes using a fork.

Note: You can use aluminum foil. If the flounder is a saddle blanket, use whatever you have in the kitchen that can hold it and buy a few extra onions and bell peppers. If you like it spicy, use DJ’s Boudain Jalapeno. If your family has split taste buds, try our regular Boudain in one flounder.

If you desire to move the flounder into a serving dish, we suggest using 2 large spatulas to carefully pick up the fish. For a large flounder, ask someone for help!
